Ce r\u00e9gal, qui peut \u00eatre farci au fromage, \u00e0 la viande ou au fromage blanc, occupe une grande place sur la table des minorquins, en particulier pour P\u00e2ques. Les grand-m\u00e8res, avec leurs mains expertes, pr\u00e9paraient la p\u00e2te en commen\u00e7ant de z\u00e9ro, en m\u00e9langeant de simples, mais savoureux ingr\u00e9dients. La patience et l\u2019amour qu\u2019elles y mettaient \u00e0 chaque \u00e9tape du processus, se sentaient \u00e0 chaque bouch\u00e9e.<\/p>\n<h4><strong>Ingr\u00e9dients:<\/strong><\/h4>\n<ul>\n<li>600 gr. de farine<\/li>\n<li>200 gr. saindoux<\/li>\n<li>20 gr. levure fra\u00eeche<\/li>\n<li>Une pinc\u00e9e de sel<\/li>\n<li>150 gr. d&#8217;eau<\/li>\n<\/ul>\n<p>Pour le fromage :<\/p>\n<ul>\n<li>1 200 kg. fromage frais<\/li>\n<li>4 \u0153ufs moyens<\/li>\n<li>3 cuill\u00e8res \u00e0 soupe de farine<\/li>\n<li>3 cuill\u00e8res \u00e0 soupe d&#8217;huile<\/li>\n<li>Sel (facultatif)<\/li>\n<\/ul>\n<h4><b>Pr\u00e9paration ant\u00e9rieure\u00a0:<\/b><\/h4>\n<p><strong>Pr\u00e9paration de la p\u00e2te<\/strong> : Faire fondre la levure dans de l\u2019eau et ajouter le saindoux, la farine et le sel. P\u00e9trir jusqu&#8217;\u00e0 obtenir une p\u00e2te de consistance lisse et ferme, rajustez avec de la farine ou de l&#8217;eau si n\u00e9cessaire. Cette p\u00e2te \u00e9quilibr\u00e9e sera la base parfaite pour les Formetjades .<\/p>\n<p><strong>Pr\u00e9paration du Fromage<\/strong> : La veille, r\u00e2pez et \u00e9gouttez le fromage sur un torchon propre. Laisser reposer 24 heures au r\u00e9frig\u00e9rateur pour que le fromage s\u00e8che correctement. Le lendemain, m\u00e9langez le fromage \u00e9goutt\u00e9 avec les \u0153ufs, la farine et le sel au go\u00fbt, dans un bol. M\u00e9langez et formez des boules de taille moyenne, en pensant bien qu&#8217;elles augmenteront dans le four, \u00e0 cause de l&#8217;\u0153uf pr\u00e9sent dans le m\u00e9lange. Cette pr\u00e9paration garantit une texture et une saveur exceptionnelles aux Formetjades .<\/p>\n<h4><\/h4>\n<h4><b>\u00c9laboration:<\/b><\/h4>\n<ol>\n<li>De cette p\u00e2te, prenez deux portions en forme arrondie.<\/li>\n<li>Placez une boule de fromage dans l&#8217;une des portions et faites quatre coupures dans l&#8217;autre, cr\u00e9ant ainsi une forme d&#8217;\u00e9toile.<\/li>\n<li>Superposez les deux portions en appuyant sur les bords avec vos doigts pour qu&#8217;ils adh\u00e8rent bien.<\/li>\n<li>\u00c0 l\u2019aide d\u2019un coupe-p\u00e2tes aux extr\u00e9mit\u00e9s arrondies, coupez l\u2019exc\u00e9dent de p\u00e2te.<\/li>\n<li>Laissez reposer les Formetjades , car, comme elles contiennent de la levure, elles ont besoin d&#8217;un bref repos.<\/li>\n<li>Cuire au four pr\u00e9chauff\u00e9 \u00e0 170\/180\u00ba C. La cuisson doit \u00eatre progressive pour \u00e9viter qu&#8217;elles ne coulent. La patience est la cl\u00e9, il ne faut pas \u00eatre press\u00e9, ni les faire trop dorer\u00a1 !<\/li>\n<\/ol>\n<p>M\u00eame si la premi\u00e8re fois, elles ne sont pas parfaites, leur gout sera sans pareil.
