The bover snail (h\u00e9lix aspersa muller by its scientific name) has always been greatly appreciated culinarily in the Mediterranean, well stewed with crab, grilled or <em>a la llauna<\/em>, in a tin.<\/p>\n<p><a href=\"\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2016\/05\/2016-04-20-PHOTO-00000017.jpg\"><img loading=\"lazy\" class=\"aligncenter size-bd-normal wp-image-1238\" src=\"\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2016\/05\/2016-04-20-PHOTO-00000017-660x330.jpg\" alt=\"Snails\" width=\"660\" height=\"330\" \/><\/a><\/p>\n<p>Since the end of last year, Lola Su\u00f1\u00e9 and Rodrigo Romero have set up the first fresh snail farm on an estate on the island, in which they have installed a breeding area of 200 square metres. Slowly but surely, they have been able to start supplying prestigious restaurants and they are planning the production of tinned snails, cosmetic products and experiences such as a project associated with the slow-food movement.<\/p>\n<p><a href=\"\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2016\/05\/IMG_7915.jpg\"><img loading=\"lazy\" class=\"aligncenter size-bd-normal wp-image-1236\" src=\"\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2016\/05\/IMG_7915-660x330.jpg\" alt=\"Plantaci\u00f3n Es Caragol\" width=\"660\" height=\"330\" srcset=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2016\/05\/IMG_7915-660x330.jpg 660w, https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2016\/05\/IMG_7915-1052x526.jpg 1052w\" sizes=\"(max-width: 660px) 100vw, 660px\" \/><\/a><\/p>\n<p>In an interview for the Discovery Menorca Blog they explain to us that in the commercialisation process, they select the adult snails of 10 grams that are dried for two weeks so that they empty their viscera. Then they make them hibernate for a week at more or less 4 degrees and end up supplying them live to restaurants and individuals, in mesh bags. The really nice part of all this is that process is done in some old installations which before were used to mature cheese but was in disuse.<\/p>\n<p><a href=\"\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2016\/05\/2016-04-20-PHOTO-00000023.jpg\"><img loading=\"lazy\" class=\"aligncenter size-bd-normal wp-image-1235\" src=\"\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2016\/05\/2016-04-20-PHOTO-00000023-660x330.jpg\" alt=\"Es Caragol\" width=\"660\" height=\"330\" srcset=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2016\/05\/2016-04-20-PHOTO-00000023-660x330.jpg 660w, https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2016\/05\/2016-04-20-PHOTO-00000023-1052x526.jpg 1052w\" sizes=\"(max-width: 660px) 100vw, 660px\" \/><\/a><\/p>\n<p>We predict a great future for these lads from <a href=\"http:\/\/escaragoldemenorca.wix.com\/escaragoldemenorca\" target=\"_blank\">Es Caragol <\/a>of Menorca, as they call their company and we hope that their good practices can be consolidated.
