{"id":7277,"date":"2018-07-09T10:29:07","date_gmt":"2018-07-09T08:29:07","guid":{"rendered":"https:\/\/www.bonninsanso.com\/discoverymenorca\/?p=7277"},"modified":"2018-07-10T16:03:56","modified_gmt":"2018-07-10T14:03:56","slug":"the-red-gold-of-menorca","status":"publish","type":"post","link":"https:\/\/www.bonninsanso.com\/discoverymenorca\/the-red-gold-of-menorca\/","title":{"rendered":"The red gold of Menorca"},"content":{"rendered":"<p>In haute <strong>cuisine it is known as red gold because it\u2019s average price is around 15 euros<\/strong> a gram and if we wanted to buy a kilo we would have to pay 12,000 euros.<\/p>\n<p>Today we want to <strong>focus our attention on the red saffron that for the last six years<\/strong> has been grown in Menorca by Isafran.\u00a0 This company, on its farm,<strong> Santa Margarita in Es Mercadal, grows 200,000 saffron bulbs<\/strong> on an area of almost one hectare.\u00a0 This <strong>premium saffron<\/strong> carries a first-class classification and has achieved a culinary endorsement not only of all the chefs on the island but also of the well-known chef, Maria Jose San Roman, from the famous Monastrell restaurant in Alicante.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-7281\" src=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2018\/07\/Azafr\u00e1nMenorca2.jpg\" alt=\"\" width=\"1024\" height=\"768\" \/><\/p>\n<p>At the forefront of this curious <strong>agricultural project is the Italian expert, Omar Zola<\/strong>, who is responsible for growing, packaging and marketing the first biological saffron of the Baleares. To produce saffron, the stigmas (part of the flower which catches pollen) must be<strong> painstakingly handpicked<\/strong> in the early morning before the flowers open and deposited in wicker or wooden baskets in small quantities to avoid crushing.<strong> This delicate and complex operation takes several days<\/strong> and is so labour intensive making it the most expensive spice in the world.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-7282\" src=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2018\/07\/Azafr\u00e1nOmar.jpg\" alt=\"\" width=\"1024\" height=\"768\" \/><\/p>\n<p>The <strong>manual drying<\/strong> of this product is carried out on the same day of harvesting using wild olive firewood.
