Se trata de un <strong>crema dulce, un postre t\u00edpico que se elabora tradicionalmente durante las fiestas de Sant Joan<\/strong>. A diferencia del menjar blanc que se elabora en otras regiones, el de <strong>Menorca no lleva almendra sino que su base principal es la leche.<\/strong><\/p>\n<p>Los ingredientes principales son el az\u00facar y el arroz, raz\u00f3n por la cual se cree que el <strong>origen sea \u00e1rabe<\/strong>. En cuanto a la etimolog\u00eda del nombre, la mayor certeza es que proceda de la traducci\u00f3n de \u201cispidba\u201d al castellano: \u201cmanjar blanco\u201d. El primer texto escrito que documenta de este plato se encuentra en el libro \u201cArt de cuina\u201d del fraile Fra Francesc Roger (1704-1764) y est\u00e1 explicado en el cap\u00edtulo de \u201cdiverses cremes i menjar blanc\u201d. (diversas cremas y menjar blanc)<\/p>\n<p>A continuaci\u00f3n, mostramos la receta de dicho libro.<\/p>\n<p><strong>Ingredientes<\/strong><\/p>\n<p>3 libras de leche (1,4 litros)<\/p>\n<p>0,5 libras de az\u00facar (230 gramos)<\/p>\n<p>4\u00a0<em>unces <\/em>de almid\u00f3n picado (120 gramos)<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-7889\" src=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2019\/05\/ingredients-menjablanc.jpg\" alt=\"\" width=\"1119\" height=\"839\" \/><\/p>\n<p>Dentro de una olla se ponen 1,20 litros de leche, los 230 gramos de az\u00facar y se pone en el fuego, removiendo continuamente. A la versi\u00f3n de Fra Roger se le puede a\u00f1adir tambi\u00e9n canela en rama y la parte amarilla de un lim\u00f3n en el primer hervor para darle aromas.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-7890\" src=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2019\/05\/aroma-canyella-i-llimona.jpg\" alt=\"\" width=\"1119\" height=\"839\" \/><\/p>\n<p>Cuando empiece a hervir se le a\u00f1ade el almid\u00f3n (Maicena) y se va removiendo.\u00a0Cuando se espese, se saca del fuego, se remueve un poco m\u00e1s y si no est\u00e1 suficientemente espeso, se vuelve a poner en el fuego removiendo.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-7893 size-full\" src=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2019\/05\/a-punt-1.jpg\" alt=\"\" width=\"1119\" height=\"876\" \/><\/p>\n<p>Si es muy espeso, se le a\u00f1ade la leche restante. Para estar en su punto, tiene que hilar cuando se vierta la mezcla de una cuchara.
