Knowing the best place to look for them is one of <strong>the best kept secrets of the mushroom hunter<\/strong>.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-8697\" src=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2019\/11\/Rovell\u00f3-de-sang.jpg\" alt=\"\" width=\"615\" height=\"377\" \/><strong>ESCLATA-SANG DE PI (<em>Lactarius sanguifluus<\/em>)<\/strong><\/p>\n<p>In Castilian it is called \u201cchanterelle with vivid blood\u201d.\u00a0 It is the mushroom par excellence in the Balearic Islands, it is also the most appreciated.\u00a0 It is found in pine forests of limestone soil. The cap goes from convex to flat, in other words it is funnel shaped and there are concentric circles.\u00a0 It is a pale red to a red wine colour and sometimes has greenish coloured spots which is a result of a parasitic fungus that improves its texture and flavour.\u00a0 Its gills are thin, tightly packed and somewhat irregular of a red or pinkish brown colour.\u00a0 When it is cut a blood coloured latex emerges.\u00a0 The meat is grainy, white and firm.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-8698\" src=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2019\/11\/esclatasang-de-bruc.jpg\" alt=\"\" width=\"615\" height=\"600\" \/><strong>ESCLATA-SANG DE BRUC (<em>Lactarius deliciosus<\/em>)<\/strong><\/p>\n<p>In Castilian it is called \u201cniscalo\u201d.\u00a0 It is a mushroom of the same species as the \u201cesclata-sang de pi\u201d but its colouration isn\u2019t as vivid \u2013 more of an orangish colour.\u00a0 When cut it has an orange colour latex.\u00a0 It has green spots on the stem when old.\u00a0 Both these types are excellent although this one is of a slightly inferior quality.\u00a0 It is found in pine or deciduous woods.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-8699\" src=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2019\/11\/Cama-seca.png\" alt=\"\" width=\"615\" height=\"483\" \/><strong>DRY BED (<em>Cantharellus cibarius<\/em>)<\/strong><\/p>\n<p>In Castilian it is called \u00abchanterelle\u00bb. It is the second best known mushroom in Menorca after the \u201cesclata-sang\u201d. It has a cap of various and irregular shapes and can reach 10 centimetres in diameter. It has a white coloration when young, then light yellow and finally orange yellow. It is found under holm oaks.\u00a0 It is greatly appreciated in the kitchen and even used to make a liquor.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-8700\" src=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2019\/11\/Tricholoma_terreum.jpg\" alt=\"\" width=\"615\" height=\"455\" \/><strong>FREDOLIC (<em>Tricholoma terreum<\/em>)<\/strong><\/p>\n<p>In Castilian it is called \u00abbold.\u00bb It is a good culinary mushroom but not much is collected in Menorca.\u00a0 It usually grows in groups forming black carpets.\u00a0 It is small in size and doesn\u2019t usually exceed 7 centimetres in diameter.\u00a0 It is found in pine forests.\u00a0 The cap is conical or flared with fibrous scales of dark grey.\u00a0 Its gills are completely white, wide and without scales.\u00a0 It has a thin, white cylindrical stem.\u00a0 Its flesh is greyish white in colour with a smell reminiscent of nuts.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-8701\" src=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2019\/11\/Tricholoma_atrosquamosum.jpg\" alt=\"\" width=\"615\" height=\"461\" \/><strong>FREDOLIC D\u2019ALZINA (<em>Tricholoma atrosquamosum<\/em>)<\/strong><\/p>\n<p>Of the same species as the previous one but does not make such good eating. Its cap is darker, especially in the centre. Its scales are more black. The gills are still whitish and wide with darker shades.\u00a0 It has a peppery smell.\u00a0 It is found under pine and holm oaks in Menorca.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>With
