{"id":9327,"date":"2020-06-29T11:40:48","date_gmt":"2020-06-29T09:40:48","guid":{"rendered":"https:\/\/www.bonninsanso.com\/discoverymenorca\/?p=9327"},"modified":"2020-06-29T11:43:45","modified_gmt":"2020-06-29T09:43:45","slug":"baked-aubergines","status":"publish","type":"post","link":"https:\/\/www.bonninsanso.com\/discoverymenorca\/baked-aubergines\/","title":{"rendered":"Baked Aubergines"},"content":{"rendered":"<p class=\"p1\"><span class=\"s1\">Once again, Herminia Fortuny has given us one of her wonderful recipes.<span class=\"Apple-converted-space\">\u00a0 <\/span>This is a typical Menorcan recipe and is perfect to make in the summer when the aubergines are in season.<\/span><\/p>\n<p class=\"p1\"><strong><span class=\"s1\">Ingredients:<\/span><\/strong><\/p>\n<ul>\n<li class=\"p1\"><span class=\"s1\">2 aubergines<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">2 large onions<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 large green pepper<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">2 medium sized ripe tomatoes<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">garlic and chopped parsley<\/span><\/li>\n<\/ul>\n<p class=\"p1\"><strong><span class=\"s1\">Preparation:<\/span><\/strong><\/p>\n<ol>\n<li class=\"p1\"><span class=\"s1\">Remove the stalk and cut the aubergines in half lengthwise.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Boil in plenty of water and salt for about 40 minutes.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">When they are boiled, let them drain a minimum of 3 hours, to release all the water.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Once well drained, take the pulp out with a spoon being very careful not to break the skin.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Oil an oven proof dish and place the empty aubergine skins in it and put to one side.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Chop the onions finely and fry in olive oil.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">When the onion is transparent, add the green pepper and the peeled tomatoes, all chopped into very small pieces. Also add a couple of large chopped garlic cloves, chopped parsley and the aubergine pulp.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Saut\u00e9 everything and season to taste.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Once cooked, fill the aubergines with this mixture.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Top with breadcrumbs, mixed with garlic and chopped parsley and sprinkle with olive oil.<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">Bake at 180 degrees for about 40 minutes until the breadcrumbs are golden.<\/span><\/li>\n<\/ol>\n<p class=\"p1\"><span class=\"s1\">Bon Appetite!<\/span><\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-9325\" src=\"https:\/\/www.bonninsanso.com\/discoverymenorca\/wp-content\/uploads\/2020\/06\/PHOTO-2020-03-29-11-36-16-copia.jpg\" alt=\"\" width=\"1084\" height=\"706\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Once again, Herminia Fortuny has given us one of her wonderful recipes.\u00a0 This is a typical Menorcan recipe and is perfect to make in the summer when the aubergines are in season.
