Cook a typical Menorcan dish: Oliaigua with figs

The fig season has begun and with it, the traditional gastronomic Menorcan dish; Oliaigua. It is a traditional soup, quick to prepare and above all very economical, which can be served warm or at room temperature. 


Ingredients:

  • Olive oil
  • 12 ripe tomatoes
  • 2 medium onions 
  • 2 medium green peppers (not Italian)
  • 6 or 8 garlic
  • A handful of parsley
  • Salt
  • Ground black pepper
  • Water
  • Figs

 

Preparation:

  1. Peel the tomatoes and cut into cubes.
  2. Next, cut the onions, peppers and garlic into the same size.
  3. Fry the onion and add the peppers, garlic and parsley. 
  4. When everything is half fried, add the tomato, salt and pepper to taste. 
  5. Once cooked, add the water and adjust the salt, if necessary. 
  6. Remove from the heat before it comes to the boil. 
  7. Serve with figs or pieces of bread.
